NSF H1 is a registration by NSF International for lubricants formulated for use where incidental food contact is possible. H1 lubricants are restricted to 10 parts per million of the final food product.

Do I need H1 throughout the plant, or only on direct-contact equipment?

Best practice is H1 wherever a leak, spatter or airborne mist could reach product. Most plants adopt H1 plant-wide to eliminate the risk of the wrong oil being used on direct-contact machinery.
